Mughlai Biryani

A popular part of Mughlai cuisine, this Biryani came to India with the arrival of the Mughals. It spread all across India rapidly and is still quite popular in the country now. Mughali Biryani is considered to be the most authentic biryani version which is still made in the traditional manner. Back in the Mughal days, shahi bawarchis (royal cooks) used to make Biryani with red-meat chunks marinated in a melange of spices and slow-cooked on a bed of rice along with kewra.
