Kampuri Biryani
This lesser-known Biryani version originated in the Muslim town of Kampur in Assam. This simple and delicious dish is packed with so many flavours. Firstly the chicken is cooked along with vegetables like peas, carrots, beans and potatoes, and bell peppers. Some mild whole spices like cardamom and nutmeg are added to give a subtle flavour. Cooked chicken and veggies are then mixed with the rice and cooked over a low flame.
