Kolkata Biryani
The Calcutta version of Biryani might come as a shock to Biryani lovers who dislike having potatoes or any other vegetarian ingredients in their Biryani. Kolkata Biryani is very much like any other Biryani version which is power-packed with a lot of flavours.
After Biryani was banned by the British, Nawab Wajid Ali Shah wanted to recreate a similar Biryani dish in the city of Calcutta. As he was not able to afford meat at that time, the local cooks gave a twist to the Biryani recipe and replaced the meat with fried potatoes. This gave the Biryani a similar flavour and appearance.
