Potatoes – 3 medium sized
Green Peas – half cuped
Red chilli powder
coriander powder
cumin seeds
funnel seeds
Garam Masala
Amchur
Salt
chopped coriander
Chopped green chillies
Ghee
Oil
Begin by mixing flour and salt in large bowl. Add a little bit of ghee or oil and mix well. You can slowly add water and knead it into a stiff dough. Cover it with a damp cloth and let it rest for the next 30 min.
Turn on the stove and boil the potatoes and peas till properly done. Mash then slightly and set aside.
In a Pan, heat oil and add cumin seeds, fennel seeds, chopped ginger and green chillies and saute for few seconds.
Next, add the mashed potatoes, green peas and all the spices and salt as required. Mix well and add the chopped coriander leaves.
Cut the disc into two parts, making a semicircle. Take one part and apply water on the straight edges. Bring the two corners together to form a cone like structure. Add 2-3 tablespoons of filling inside the cone and press it lightly.
Add water to the edges and seal them, making sure that there are no gaps. Continue the same process with the rest of the dough and filling. Next, in a pan, heat oil and start frying the samosas in batches on low heat.
Don’t flip them for the first 5 to 6 minutes. Once they start to firm up, increase the heat to medium and carefully flip them.
