Vegetarian Treasury (Part 5) : Besan Halwa Halwai Wala

A traditional dessert that you can make anytime to treat your family and friends on any occasion, halwa is truly delicious and can be prepared with any flour. This halwa recipe is prepared with gram flour or besan, which is the common ingredients that you can find in your home. It requires ghee, sugar, almonds, pistachios, saffron and rose water to cook this mouth-watering dessert recipe! Try this Punjabi recipe in winters and enjoy with your loved ones!

Step 1

To start with, place a deep-bottomed pan over medium flame and boil 4 cups of water in it. Meanwhile, grind cardamom into a fine powder. Add in sugar, cardamom powder, saffron and stir until all the sugar granules get dissolved and syrup is formed.

Step 2

Now, place another pan on medium flame and melt ghee in it. Once the ghee is hot enough, lower the flame and add unshelled pistachios and almonds in it and saute for two minutes. Mix in gram flour and stir until the colour turns light brown, stir continuously so as not burn the gram flour.

Step 3

Pour the prepared sugar syrup in roasted gram flour and mix well till a thick consistency is achieved. Let the halwa cook for about two minutes and switch off the burner.

Step 4

Mix in the rose water and stir once again. Serve warm on cold nights. (Optional: You can garnish the halwa with mixed dry fruits.)
